Buckets flowing over with fruit

We had so much fruit last year, that we turned some of it into fruitleather. A very healthy and nice/sweat snack. Through a friends blog I found out about this and thought we'd give it a go.

To start with, we did the silicone bakingsheet hunt. Wasn't that easy, but we found some. And for them who'd like to fool around and try to use bakingpaper, believe you me, forget it. That doesn't work.
Lay the silicone sheet on top of a bakingtray. Don't try to put them straight on the ovenrack, that too, does not work.
Turn the oven at a 100F or the lowest temperature you have.

Next you get some fruit, we used pears and peaches, but you could also use (pine)apples, nectarines, grapes, banana's or whatever. (banana's tend to give a funny colour, but it does work)
Peel and core the fruit, cut it in pieces, stick it in a bowl and run the foodprocessor through it.

This is what you'll end up with

Poor the sauce onto the bakingsheet, flatten/spread it a bit with a spatula so that you're left with an evenly leveled layer of fruit sauce.

Put the sheets in the oven and leave them there untill the fruit has totaly dried. This can take up to 8-10 hours. If the oven doesn't go as low as 100 you may want to leave the ovendoor open a little. I put a spoon between the door, so it didn't stay open too wide.

When the fruit has dried, you take it out of the oven, leave it to cool down just slightly. Not too long, because then it hardens and that makes it difficult to roll.

Put an layer of bakingpaper over the top, turn the silicone sheet over and peel it off the fruit leather. The fruit leather will then be on top off the bakingpaper.

Roll it up and tie pieces of robe around it. Be smart and try to cut the leather without the pieces of robe, with a bit of luck the leather will unroll and make live misserable for you, because by then you've allready cut it into little pieces making it really hard to roll up and tie some robe around it after all.

So, roll up and devide the leather into little pieces by tying robe around it.

THEN cut them into little slices. Stick them in the kids lunchboxes, or your own for that matter, eat them as a snack on the go, at coffee time, or just somewhere during the day.

You can keep them for quite some time in an airtight container.
